Banana Bread Muffins

  • 3 bananas
  • 4 eggs
  • 3 tbsp crunchy peanut or cashew butter
  • 3 heaped tbsp ground almonds
  • 1 tsp cinnamon
  • Sprinkle of sea salt
  • 1 tsp baking powder


  1. Pre heat the oven to 180°C/350°F/gas mark 4 and line a muffin tin with muffin cases.
  2. Pop the ingredients in a food processor or blender and mix into a cake batter. Pour into the cases (it should make around 7-8 muffins) and bake in the oven for around 20-25 minutes.
  3. Allow to cool and munch.
