Cottage Cheese & Flaxseed Pancakes

  • 3 eggs
  • 3 heaped tbsp cottage cheese
  • 1 tbsp flaxseed
  • Butter or olive oil for cooking


  1. Place a knob of butter or a splash of olive oil in a non-stick frying pan over a moderate heat.
  2. Beat the eggs and cottage cheese in a bowl until combined.
  3. Stir in the flaxseed.
  4. Gently pour the mixture into the pan and cook for 4-5 minutes before flipping over to cook the underside
  5. Serve with fresh berries and a sprinkle of cinnamon
