Greek Salad Burgers

  • 500g chicken or turkey
  • Handful of cherry tomatoes,
    finely chopped
  • 1 small red onion, finely
  • Handful of green or black
    olives finely chopped
  • 120g feta cheese chopped
    pink salt and freshly
    or crumbled
  • 1 heaped tbsp. tomato puree
  • 1–2 tbsp olive oil
  • 2 tsp mixed herbs
  • Celtic Sea or Himalayan
    ground black pepper


  1. Pre heat the oven to 180°C/350°F/gas mark 4.
  2. Place all the ingredients in a large bowl and combine thoroughly with your hands.
  3. Shape into 6 patties and place on a grill tray in to oven to cook for 20–25 minutes.
  4. Serve with sweet potato wedges and a romaine lettuce wrap.
