Prawn Guactail

This makes a fantastic dinner party starter OR is just a great snack all on its own.

  • 1 large ripe avocado
  • Juice and zest of 1 lime
  • ½ red onion, finely chopped
  • ½ tsp. crushed chilli flakes
  • Handful fresh coriander, chopped
  • Salt and pepper
  • 100g cooked king prawns
  • ¼ cucumber, diced
  • Handful cherry tomatoes, halved
  • Smoked paprika


  1. Place the avocado in a large bowl, add the lime juice and zest and mash into creamy consistency.
  2. Add the onion, crushed chilli flakes, coriander and mix all the ingredients together. Season to taste.
  3. When ready to serve add the tomatoes, cucumber and king prawns to the guacamole mixture and combine. Serve in the avocado shells with a sprinkle of smoked paprika and a side salad.
