Quick Ratatouille

Serves: 6-8

Cook: 25 - 30 minutes

Ingredients

  • 1 tbsp. olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, peeled and chopped
  • 2 courgettes, chopped
  • 1 red pepper, chopped
  • 3 stalks celery (optional)
  • 800g chopped tomato
  • 1 tbsp. mixed herbs
  • 2–3 tbsp. olives (optional)
  • Salt and pepper

Directions

  1. Pan fry the onions, garlic and peppers in the olive oil. Add the courgettes, celery and peppers and stir-fry for 2–3 minutes.
  2. Add the tomatoes, herbs, and olives and season.
  3. Cook through for 10–15 minutes until the vegetables are soft.
  4. Season to taste and serve.
