Turkey Sausage Traybake

    2 tbsp. olive oil
  • 450g new potatoes, halved
  • 2 fennel bulbs, sliced into wedges
  • 1 red pepper, deseeded and cut into large chunks
  • 1 orange pepper, deseeded and cut into large chunks
  • 1 small red onion, peeled and sliced
  • 3 cloves garlic peeled and finely chopped
  • 1 heaped tbsp. wholegrain mustard
  • 1 tsp. thyme
  • Salt and freshly ground black pepper
  • 8 turkey sausages
  • Handful of fresh parsley, roughly chopped


  1. Pre heat the oven to 200°C/390°F/gas mark 6.
  2. Place the olive oil and the potatoes into a large baking tray, season and ensure the potatoes are fully coated in the olive oil. Place in the oven to cook for about 20 minutes.
  3. Whilst they get a head start place the remaining ingredients except for the sausages and fresh parsley into a bowl and use your hands to combine all the ingredients together thoroughly.
  4. Remove the potatoes from the oven and add your other ingredients and stir everything together and spread out evenly before placing the turkey sausages on the top. Return to the oven to cook for a further 30-35 minutes turning the sausages halfway.
  5. Top with the fresh parsley, serve and enjoy.
