Biscoff Bites

Ingredients
- 300g white chocolate (85% dark chocolate can be substituted)
- 120g Biscoff spread or smooth peanut butter
- 60g Biscoff biscuits, crushed (or substitute 60g Nairn’s GF caramel oatcakes or any oatcakes/crackers)
- 60g roasted, salted peanuts, crushed (or any roasted nuts)
- ½ -1 tsp. cinnamon
- Pinch of nutmeg
- Pinch of sea salt
Optional: add maple syrup/honey/stevia to taste if using dark chocolate instead of white.
Method
- Line a loaf tin with greaseproof paper (or prepare some chocolate moulds).
- Melt the chocolate in a heatproof bowl over a saucepan of simmering water. Once melted stir in the Biscoff spread (or nut butter) and combine thoroughly.
- Remove the melted chocolate mixture from the heat, allow to cool for 5 minutes. Set aside a 1-2 tbsp of the crushed biscuits to use as a topping. Add the remaining crushed biscuits to melted chocolate and stir in the nuts, nutmeg and cinnamon.
- Stir to combine the ingredients and add salt to taste.
- Pour into the prepared tin.
- Crumble the biscuits you’ve set aside over the top of the chocolate and place in the fridge or freezer to set.
- Once the chocolate has completely set, remove from the chocolate mould, slice into squares and store in the fridge.
