Ingredients
- 4 eggs
- 175g butter
- 150g coconut sugar or 100g raw honey
- 225g ground almonds
- 1 tsp vanilla extract
- 1 tsp baking soda
- 8–10 plums, stones removed and sliced in half
Method
- Pre heat the oven to 160°C/350°F/gas mark 3.
- Beat the eggs, butter, and coconut sugar or honey on low with a hand or stand mixer. (If you don’t own a mixer, a blender will do.)
- Add the ground almonds, vanilla extract, and baking powder and continue to mix.
- Stir in the plum halves.
- Bake in a 91/2-inch round baking pan for 60 minutes. Check the cake by inserting a knife into the middle; it should come out clean.
- Once cooked, let the cake cool slightly before serving.
