Ingredients
- 1 egg
- 1 tbsp unsweetened almond milk
- 1 tbsp xylitol or 2 tsp honey
- 1 tbsp cocoa
- 1 tbsp ground almonds
- ½ tsp orange extract OR peppermint extract
- 2-3 squares of 85% dark chocolate
Method
- Place the egg, almond milk and honey or xylitol in a mug and beat with a fork.
- Add the cocoa, almonds and flavouring of your choice. Combine thoroughly.
- Drop 2–3 squares of dark chocolate into the mixture and push to the bottom of the mug.
- Place in the microwave and cook for 1 minute. (Check by popping a knife in the top and checking that it comes out dry). You can also oven cook this for 15 minutes on 180°C/350°F/Gas mark 4.
