Ingredients

  • 4 eggs
  • 175g butter
  • 150g coconut sugar or 100g raw honey
  • 225g ground almonds
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 8–10 plums, stones removed and sliced in half

Method

  1. Pre heat the oven to 160°C/350°F/gas mark 3.
  2. Beat the eggs, butter, and coconut sugar or honey on low with a hand or stand mixer. (If you don’t own a mixer, a blender will do.)
  3. Add the ground almonds, vanilla extract, and baking powder and continue to mix.
  4. Stir in the plum halves.
  5. Bake in a 91/2-inch round baking pan for 60 minutes. Check the cake by inserting a knife into the middle; it should come out clean.
  6. Once cooked, let the cake cool slightly before serving.
