Ingredients

  • 2 carrots, grated
  • 1 sweetheart cabbage, finely sliced
  • 2 celery stalks, finely chopped
  • 1/2 red cabbage, finely chopped
  • 50g walnuts, crushed
  • 40g sultanas
  • For The Dressing

  • 1/2 red onion, finely chopped
  • 1 tbsp apple cider vinegar
  • 1 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • Juice of 2 lemons
  • Salt to taste
  • Freshly ground black pepper
  • Handful of fresh chives finely chopped

Method

  1. Place all the slaw ingredients in a bowl and toss together to combine.
  2. Place the dressing ingredients in a small bowl and stir to combine, or place in a glass jar and shake, then pour over the slaw. Toss the ingredients in the dressing. This can be served immediately but is best left to marinade for 30 minutes or a couple of hours in the refrigerator.
