Ingredients
- 2 carrots, grated
- 1 sweetheart cabbage, finely sliced
- 2 celery stalks, finely chopped
- 1/2 red cabbage, finely chopped
- 50g walnuts, crushed
- 40g sultanas
- 1/2 red onion, finely chopped
- 1 tbsp apple cider vinegar
- 1 tbsp balsamic vinegar
- 3 tbsp olive oil
- Juice of 2 lemons
- Salt to taste
- Freshly ground black pepper
- Handful of fresh chives finely chopped
For The Dressing
Method
- Place all the slaw ingredients in a bowl and toss together to combine.
- Place the dressing ingredients in a small bowl and stir to combine, or place in a glass jar and shake, then pour over the slaw. Toss the ingredients in the dressing. This can be served immediately but is best left to marinade for 30 minutes or a couple of hours in the refrigerator.
