Cauliflower Hummus

We LOVE hummus and this recipe is a great way to get even more veggies into your day by swapping the chickpeas for cauliflower. Get dunking your carrot sticks in this!

Ingredients

  • 500g cauliflower
  • 4 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 2 heaped tbsp almond butter
  • 2 cloves of garlic, crushed
  • 1 pinch cayenne pepper
  • 1⁄2 tsp smoked paprika
  • 1 tsp cumin
  • Himalayan Pink/Celtic Sea salt and black pepper to taste

Method

  1. Steam the cauliflower until soft.
  2. Place the cauliflower in a food processor and blend into a paste.
  3. Add the olive oil, lemon juice, almond butter, garlic, cayenne, paprika and cumin and blend again until the mixture forms a ‘hummous’ consistency.
  4. Taste the mixture and season with salt and pepper as desired. 
  5. Serve with vegetable crudities.
