Ingredients

  • 1 tbsp butter, ghee, or olive oil
  • 1 large cauliflower, grated
  • 1-2 tbsp of cream (optional)
  • Salt and pepper to taste

Method

  1. Steam the cauliflower it is until soft, about 4–5 minutes.
  2. Place in a large bowl, add the fat and cream, and season to taste with salt and pepper.
  3. Mash until the mixture is a smooth, creamy consistency.
