- 1 tbsp butter, ghee, or olive oil
- 1 large cauliflower, grated
- 1-2 tbsp of cream (optional)
- Salt and pepper to taste
- Steam the cauliflower it is until soft, about 4–5 minutes.
- Place in a large bowl, add the fat and cream, and season to taste with salt and pepper.
- Mash until the mixture is a smooth, creamy consistency.
