Wholesome and delicious, these no-bake choc almond energy bites are packed with oats, roasted almonds, dark chocolate, and a hint of cinnamon – the perfect snack for busy days or post-workout fuel.

Choc Almond Energy Bites

Ingredients

  • 130g peanut butter (or any seed/nut butter)
  • 70g honey or maple syrup
  • 70g apple sauce
  • 1 tsp. cinnamon
  • Pinch of salt
  • 30g puffed rice
  • 70g fine porridge oats
  • 70g roasted almonds, chopped
  • 60g dark chocolate, chopped (or chocolate chips)

Method

  1. In a large mixing bowl combine the peanut butter, honey, apple sauce, salt and cinnamon.
  2. Add the puffed rice, oats, almonds, sultanas and mix into a dough that you can roll into balls.
  3. If the mixture is too sticky add a little more oats or rice. If it’s too try and not binding add a little more applesauce or nut butter.
  4. Place a sheet of greaseproof paper on a large plate and set aside.
  5. Take handfuls of the mixture and roll into golf ball size balls and place on the prepared plate. Place in the fridge to set for 20-30 minutes and store in an airtight container.

Tip: these can be baked if you prefer more of a flapjack texture.
