Christmas Puddin’ Bites

Can we tempt you with these Christmas Puddin’ Bites? These are a great little snack which look and taste great.

Ingredients

  • 3 medjool dates (soaked in little warm water to soften)
  • 100g mixed fruit e.g. sultanas, raisins, cranberries
  • 100g mixed nuts
  • 1 tsp orange extract
  • 2 tbsp cocoa
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ginger

Topping (Optional)

  • 50g white chocolate (you can substitute melted coconut manna/butter)
  • Sprinkles of choice or crumbled, freeze dried raspberries or dried fruit

Method

  1. Place the nuts in a blender and blitz into a flour, set aside.
  2. Place the dates, dried fruit, orange extract, cocoa, vanilla, cinnamon, nutmeg, and ginger in the blender and blitz into a paste.
  3. Place the fruit and nut in a large mixing bowl and stir to combine (or use a food processor).
  4. Place a sheet of greaseproof paper on a plate, take handfuls of the mixture and shape into balls, either 16 small balls or 8 large (golf ball size) balls. If the mixture is too dry add a little water, if it’s too sticky, blend some nuts and add a little more (or add some ground almonds).
  5. Place in the fridge to set.
  6. For the topping melt the white chocolate in a heatproof bowl over a pan of simmering water or in the microwave and carefully spoon over the top of each bite.
  7. Add your sprinkle of choice and enjoy.
