Cranberry, Apple and ALmond Flapjack

Ingredients

  • 60g roasted almonds, chopped (or any nuts/seeds)
  • 250g fine porridge oats
  • 60g dried cranberries
  • 1-2 tsp. cinnamon
  • Pinch of salt
  • 100g apple sauce
  • 120g almond butter (or any seed/nut butter)
  • 130g honey or maple syrup

Method

  1. Pre heat the oven to 180°C/350°F/gas mark 4.
  2. Place the almonds, oats, cranberries cinnamon and salt in a bowl.
  3. If your peanut butter is runny you can add the remaining wet ingredients and stir to combine.
  4. Alternatively place the peanut butter, honey and apple sauce in a saucepan on a medium heat and warm through.
  5. Stir to combine, remove from the heat and add the dry ingredients. Mix all the ingredients thoroughly and then transfer to the prepared tin.
  6. Place in the oven to cook for 20-25 minutes until golden. Allow to cool in the tin before serving.
  7.

TIP: you can use this mixture to make epic granola instead of flapjacks by spreading the mixture on a baking tray and baking in the oven for 18-20 minutes until golden.
