Cranberry, Apple & Almond Flapjacks

These golden oat bars are packed with roasted almonds, cranberries, and cinnamon, bound together with apple sauce and almond butter – an epic bake that doubles as flapjacks or crunchy granola.

Ingredients
- 60g roasted almonds, chopped (or any nuts/seeds)
- 250g fine porridge oats
- 60g dried cranberries
- 1-2 tsp. cinnamon
- Pinch of salt
- 100g apple sauce
- 120g almond butter (or any seed/nut butter)
- 130g honey or maple syrup
Method
- Pre heat the oven to 180°C/350°F/gas mark 4.
- Place the almonds, oats, cranberries cinnamon and salt in a bowl.
- If your peanut butter is runny you can add the remaining wet ingredients and stir to combine.
- Alternatively place the peanut butter, honey and apple sauce in a saucepan on a medium heat and warm through.
- Stir to combine, remove from the heat and add the dry ingredients. Mix all the ingredients thoroughly and then transfer to the prepared tin.
- Place in the oven to cook for 20-25 minutes until golden. Allow to cool in the tin before serving.
TIP: you can use this mixture to make epic granola instead of flapjacks by spreading the mixture on a baking tray and baking in the oven for 18-20 minutes until golden.
