Apple and cinnamon is an immense flavour combination and goes perfectly in these delicious sweet, pancakes.
2 cox apples
1 tsp cinnamon
Pinch of nutmeg
Pinch of ground ginger
1 tbsp cashew butter
2 tbsp ground almonds
1/2 tsp baking powder
Coconut oil or butter for cooking
Juice of half a lemon
Place the apples, eggs, cinnamon, nutmeg, ginger, cashew butter and ground almonds in a blender and mix thoroughly to make a batter (we used our Nutribullet blender). Stir the baking powder into the batter.
Heat some butter or coconut oil in a non-stick frying pan and pour a small amount of batter into the pan to make a small pancake as these are easier to flip.
Cook over a medium-low heat for 2-3 minutes on one side until browned. Flip over and cook for a further 3 minutes. Serve with freshly squeezed lemon juice and extra cinnamon if desired.
