Apple and cinnamon is an immense flavour combination and goes perfectly in these delicious sweet, pancakes.
Apple & Cinnamon Pancakes
- 2 cox apples
- 4 eggs
- 1 tsp cinnamon
- Pinch of nutmeg
- Pinch of ground ginger
- 1 tbsp cashew butter
- 2 tbsp ground almonds
- 1/2 tsp baking powder
- Coconut oil or butter for cooking
- Juice of half a lemon
- Place the apples, eggs, cinnamon, nutmeg, ginger, cashew butter and ground almonds in a blender and mix thoroughly to make a batter (we used our Nutribullet blender). Stir the baking powder into the batter.
- Heat some butter or coconut oil in a non-stick frying pan and pour a small amount of batter into the pan to make a small pancake as these are easier to flip.
- Cook over a medium-low heat for 2-3 minutes on one side until browned. Flip over and cook for a further 3 minutes. Serve with freshly squeezed lemon juice and extra cinnamon if desired.
