Apple & Cinnamon Pancakes

Serves: 2-3

Cook: 10-15 minutes

Ingredients

  • 2 cox apples
  • 4 eggs
  • 1 tsp cinnamon
  • Pinch of nutmeg
  • Pinch of ground ginger
  • 1 tbsp cashew butter
  • 2 tbsp ground almonds
  • 1/2 tsp baking powder
  • Coconut oil or butter for cooking
  • Juice of half a lemon

Directions

  1. Place the apples, eggs, cinnamon, nutmeg, ginger, cashew butter and ground almonds in a blender and mix thoroughly to make a batter (we used our Nutribullet blender). Stir the baking powder into the batter.
  2. Heat some butter or coconut oil in a non-stick frying pan and pour a small amount of batter into the pan to make a small pancake as these are easier to flip.
  3. Cook over a medium-low heat for 2-3 minutes on one side until browned. Flip over and cook for a further 3 minutes. Serve with freshly squeezed lemon juice and extra cinnamon if desired.
