Ingredients
- 100g grass fed butter or cashew butter
- 50g xylitol or coconut palm sugar
- 150g ground almonds
- 30g tapioca or coconut flour
- 2 green tea bags (fine tea e.g Clipper)
- 1 tsp bicarbonate of soda
- 2 eggs, beaten
Method
- Preheat the oven to 180°C/350°F/gas mark 4.
- Line a muffin tray with muffin cases.
- Cream the butter and xylitol in a food processor or bowl.
- Add the eggs, almonds, flour and bicarbonate of soda and mix into a cake batter.
- Rip open the tea bags and pour the tea into the cake mixture, mix well.
- Pour the mixture into muffin cases.
- Bake in the oven for 15-20 minutes until golden brown.
