Jerky Turkey Skewers

Ingredients

  • 6 turkey breasts or 8 thighs
  • 1.5 tsp allspice
  • 1/2 tsp thyme
  • 1 tsp chilli powder
  • 1 tsp cinnamon
  • 1.5 tsp paprika
  • 1.5 tsp salt
  • 2 tbsp Apple Cider Vinegar
  • 2 tbsp olive oil
  • 4 cloves garlic, peeled and finely chopped or crushed
  • 1 small onion, peeled and chopped
  • Small chunk of ginger, peeled and chopped
  • 2-3 tbsp water
  • 1 tbsp honey (optional)
    For the skewers

  • 1 red pepper, deseeded and chopped into squares
  • 1 green courgette, sliced
  • 1 yellow courgette, sliced
  • 1 red onion, peeled and quartered
  • Handful of cherry tomatoes

Method

  1. Chop up the turkey into chunks.
  2. Place all the herbs, spices, onion, garlic, vinegar, honey, ginger and olive oil in a bowl and mix well. Add a little water to make a thick sauce consistency.
  3. Add the turkey to the marinade and coat thoroughly, leave for 30 minutes in the fridge or overnight if possible.
  4. Pre heat the oven to 180°C/350°F/gas mark 4.
  5. Make up the skewers with turkey and raw pepper, red onion, courgettes and tomatoes.
  6. Place in the oven to cook for 20-25 minutes or until the vegetables are soft and the turkey is cooked through.
  7. Serve with basmati rice and peas and homemade guacamole.
