Quick Turkey Fajita Burgers

We quickly put these together as a tasty take on a turkey burger and the leftovers make a great fajita on the go!

Ingredients

  • 500g turkey thigh mince
  • 1 red pepper, chopped
  • 3-4 tbsp tomato puree
  • 3-4 teaspoons of a fajita spice mix (we used Barts)

Easy Guacamole

  • 2 large, ripe avocados peeled and pitted
  • Juice and zest of half a lime
  • Himalayan Pink Salt to taste
  • Pinch of paprika

Method

  1. Preheat the oven to 180°C/350°F/gas mark
  2. Place the turkey, pepper, spice and tomato puree in a large mixing bowl and combine together thoroughly with clean hands.
  3. Shape into 4-5 burger patties and place on a baking tray to cook for 25-30 minutes depending on your oven. Be sure to check they are cooked through.
  4. Whilst the burgers cook mash the avocados in a bowl and stir in the lime, salt and paprika, fast the mixture and amend to your taste if necessary.
  5. Top the burgers with the avocado and sliced tomato and serve in a lettuce wrap with sweet potato chips.
