Ingredients
- 500g pork mince (or you can use turkey or chicken mince)
- 2 tbsp basil pesto
- 1 egg
- Salt and pepper to taste

For the Topping
- Butternut Smash
- 8–10 cherry tomatoes
Method
- Pre heat the oven to 180°C/350°F/gas mark 4.
- Mix the meat, pesto, egg, salt and pepper in a large bowl with clean hands. Roll into a ball and mold to form a cupcake shape. Alternatively, you can shape the meat into standard burger patties.
- Place the meat on a grill pan and bake for 20–25 minutes.
- Once cooked, top with a teaspoon of Butternut Smash and a cherry tomato.
