Pork and Pesto Cupcakes

Ingredients

  • 500g pork mince (or you can use turkey or chicken mince)
  • 2 tbsp basil pesto
  • 1 egg
  • Salt and pepper to taste

Method

  1. Pre heat the oven to 180°C/350°F/gas mark 4.
  2. Mix the meat, pesto, egg, salt and pepper in a large bowl with clean hands. Roll into a ball and mold to form a cupcake shape. Alternatively, you can shape the meat into standard burger patties.
  3. Place the meat on a grill pan and bake for 20–25 minutes.
  4. Once cooked, top with a teaspoon of Butternut Smash and a cherry tomato.
