Salted White Choc Crunch

Ingredients

  • 300g white chocolate
  • 160g smooth peanut butter
  • 60g Nairn’s salted caramel oatcakes (or substitute any oatcakes/crackers), crushed
  • 60g roasted, salted peanuts, crushed
  • ½ -1 tsp. cinnamon
  • Pinch of nutmeg
  • Pinch of sea salt

Method

  1. Line a loaf tin with greaseproof paper (or prepare some chocolate moulds).
  2. Melt the chocolate in a heatproof bowl over a saucepan of simmering water. Once melted stir in the peanut butter and combine thoroughly.
  3. Remove the melted chocolate and nut butter from the heat, allow to cool for 5 minutes and then stir in the crushed oatcakes, nuts, nutmeg and cinnamon.
  4. Stir to combine the ingredients and add salt to taste.
  5. Pour into the prepared tin and place in the fridge to set (or freezer to set quickly).
  6. Once the chocolate has completely set, remove from the chocolate mould, slice into squares and store in the fridge.
