Ingredients

  • 2 tbsp. olive oil
  • 1 white onion, peeled and chopped
  • 2 cloves garlic, peeled and finely chopped
  • 1 dice size piece ginger, peeled and finely chopped
  • 500g beef mince
  • 1 tbsp. medium curry powder
  • ½ tsp. cumin
  • ½ tsp. turmeric
  • ½ tsp. chilli flakes
  • Salt to taste
  • 400g tin chopped tomatoes
  • 400ml water
  • 250g frozen peas
  • Fresh coriander
    To serve

  • Rice
  • Steamed spinach or salad
  • Fresh coriander

Method

  1. Heat the olive oil in a large saucepan or casserole dish on a medium heat and add the onion, garlic and ginger. Cook for 5 minutes until the onions soften, stirring frequently.
  2. Add the beef mince and cook for a further 5 minutes until browned all over, stirring occasionally.
  3. Add the curry powder, cumin, turmeric, chili flakes, salt and stir through. Cook for another few minutes stirring occasionally. You can add a little more of any of the spices if desired.
  4. Add the chopped tomatoes, water and stir through, simmer for 20–25 minutes stirring occasionally.
  5. Add the peas, stir though and cook for 3–5 minutes more.
  6. Serve with rice, steamed spinach or salad and fresh coriander.
