Thai Prawn Courgette Noodle

Ingredients
- 3 tbsp toasted sesame oil
- 540g of prawns
- 6 courgettes cut with a julienne peeler
- 4 garlic cloves peeled and finely chopped
- 3 inch cube of ginger peeled and finely chopped
- 2 onions peeled and finely chopped
- 3 tsp chilli flakes
- 2 tsp fish sauce
- Juice and zest of 1 lime
- Himalayan salt and freshly ground black pepper
- 2 eggs beaten
Method
- Heat half of the sesame oil in a pan on a medium heat and add the prawns and cook until they turn pink. Remove them from the pan and put to one side for later.
- In the same pan add the remaining sesame oil and add the garlic, onion and ginger and cook for a couple of minutes until soft before adding the lime juice and zest, fish sauce, chilli flakes, salt and pepper and stirring through.
- Now add the julienne courgette and stir all the ingredients together and cook for another 4-5 mins until the courgette softens before adding the prawns back to the pan along with the eggs and stirring through and cooking for another 1-2 mins until the egg is cooked.
- Top with some fresh coriander and serve.
