Ingredients
- 200g cooked prawns
- ½ red pepper, chopped
- 2 carrots, finely chopped
- 2 spring onions, chopped
- 1 avocado, sliced
- 10 cherry tomatoes, halved
- ¼ cucumber, chopped
- Handful fresh coriander, chopped (optional)
- Mixed leaves to serve
- 1 tbsp. olive oil
- 1 tbsp. apple cider vinegar
- ½ tsp. salt
- Juice of 1 lemon
Vinaigrette Dressing
Method
- Combine the prawns and vegetables in a mixing bowl.
- Mix the vinaigrette dressing and pour over the prawn and vegetable mix until thoroughly coated.
- Serve with a mixed salad or in a lettuce bowl.
- Serve with mixed salad leaves
