Ingredients

  • 200g cooked prawns
  • ½ red pepper, chopped
  • 2 carrots, finely chopped
  • 2 spring onions, chopped
  • 1 avocado, sliced
  • 10 cherry tomatoes, halved
  • ¼ cucumber, chopped
  • Handful fresh coriander, chopped (optional)
  • Mixed leaves to serve

    Vinaigrette Dressing

  • 1 tbsp. olive oil
  • 1 tbsp. apple cider vinegar
  • ½ tsp. salt
  • Juice of 1 lemon

Method

  1. Combine the prawns and vegetables in a mixing bowl.
  2. Mix the vinaigrette dressing and pour over the prawn and vegetable mix until thoroughly coated.
  3. Serve with a mixed salad or in a lettuce bowl.
  4. Serve with mixed salad leaves
