Creamy Brussel Sprout Soup

Ingredients
- 500g Brussels sprouts
- 1 tsp. onion powder
- 2 tsp. garlic powder
- 1 tsp. salt
- 500ml stock
- 40ml double cream (or substitute
100g yogurt or creme fraiche) - Black pepper to taste
- Fresh parsley (optional)
Method
- Place all the sprouts, onion powder, garlic powder, salt and stock in a saucepan.
- Bring to the boil, then reduce to a simmer and cook gently for 10 minutes until the sprouts are soft.
- Use a hand-held blender to blitz the soup (or transfer to a food processor to blend and then return to the pan). Stir in the cream, season with black pepper. Add extra stock, seasoning or cream if desired. Serve topped with fresh parsley.
