Ingredients
- 150g butter
- 30ml honey
- 400g mincemeat
- 1 tsp vanilla extract
- Pinch of salt
- 300g porridge oats (smaller oats – not rolled/jumbo oats)
- 100g vanilla protein powder (you can substitute ground almonds or flour e.g. rice, coconut)
- 1 egg, lightly beaten
Method
- Line a 30 x 20cm baking tin with greaseproof paper.
- Pre heat the oven to 180°C/350°F/gas mark 4.
- Melt the butter, honey, vanilla, salt and mincemeat together in a saucepan, stirring consistently. Set aside to cool a little.
- Place the oats and protein powder in a large bowl and toss together. Add the butter, mincemeat mixture and the egg, stir to combine thoroughly.
- Place in the oven to cook for 20-25 minutes until golden on top. Cook for a little longer for a crunchier bar.
- Allow to cool completely in the tin but before doing so gently score into squares a few minutes after removing from the oven, before they harden. Then cut properly once cooled.
