Ingredients

  • 2 large carrots
  • 1 small white cabbage
  • 1 small onion
  • 4 tbsp apple cider vinegar
  • 3 tbsp wholegrain mustard
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 2 tsp honey (optional)
  • Salt to taste
  • Freshly ground black pepper
  • Handful of fresh chives finely chopped
  • 20g fresh salad cress (optional)

Method

  1. Grate the carrots and place in a large bowl
  2. Remove the outer layers of the cabbage and cut into 4 wedges and then slice as thinly as you possibly can. Add to the carrots
  3. Peel the onion, halve it and slice thinly and add to the bowl.
  4. In a small bowl combine the vinegar, mustard, olive oil, lemon juice, salt, pepper, fresh chives and honey if adding. Pour over the cabbage and mix together before leaving to marinade for 30-60 minutes. Top with fresh salad cress before serving.
