  • 1 heaped teaspoon butter or substitute olive oil
  • 1 medium apple, quartered, core removed and grated
  • 30g sultanas
  • 400g sausages (90–98% meat)
  • 1 tsp dried sage or mixed herbs
  • 20g oatcakes, crushed into a chunky crumb (optional but creates a stuffing like texture)
  • Salt and pepper


  1. Pre heat the oven to 180°C/350°F/gas mark 4.
  2. Prepare a baking tray for the burgers.
  3. Place the butter in a saucepan on a medium heat, allow to melt and add the grated apple, sultanas and stir for 2–3 minutes until the apple has softened. If it begins to burn add a spoonful of water. Once the apple has cooked set aside.
  4. Cut the skins off the sausages and place in a large mixing bowl. Add the sage, oatcakes and apple/sultana mixture. Season with a little salt and pepper before combining thoroughly using your hands.
  5. Shape into 4 burger patties and place on the prepared baking tray. Place the burgers in the oven to cook for 25–30 minutes or until cooked through.
