Moroccan Style Lamb and Apricot Burgers

Ingredients

  • 500g lamb mince
  • 2 heaped tsp ras el hanout
  • Himalayan or celtic sea salt & freshly ground black pepper
  • 1 tbsp tomato puree
  • 90g dried apricots chopped
  • For the sauce:

  • 170-200g of natural yoghurt
  • 1 heaped tsp of harissa paste
  • Juice of half a lemon
  • Fresh mint to serve

Method

  1. Pre heat the oven to 180°C/350°F/gas mark 4.
  2. Place all the burger pattie ingredients in a bowl and mix together thoroughly using your hands
  3. Make into 4 big patties or 6 smaller ones and place in a tray then into the oven to cook for 20-25 minutes
  4. Whilst the burgers cook you can make the awesome sauce
  5. Mix the yoghurt, harissa paste and lemon juice in a bowl and lightly stir them all together, have a taste and add more harissa or lemon juice if you like
  6. Serve with some rice, a crisp salad and top with some fresh mint or some roasted herby peppers and courgette and some crinkle cut sweet potatoes. We’ve tried both and they taste great
