Cheese, Tomato and Basil Quiche

Ingredients

  • 1 red pepper, diced
  • 3 spring onions, chopped
  • 150g cherry tomatoes, sliced (substitute sundried tomatoes if desired)
  • 1 heaped tsp. dried herbs
  • Handful of fresh basil leaves
  • 6 eggs
  • 300g fat free, natural cottage cheese
  • 1 heaped tsp. garlic powder
  • Salt & freshly ground black pepper

Method

  1. Pre heat the oven to 180°C/350°F/gas mark 4.
  2. Place the eggs, cottage cheese, fresh basil and garlic powder in a blender and blitz to combine. Season with salt and pepper and set aside.
  3. Grease a large oven-proof flan dish with olive oil or line with greaseproof paper. Place the red pepper, spring onions and tomatoes vegetables in the dish and pour the cottage cheese mixture over the top.
  4. Place in the oven to bake for 35–40 minutes until golden and cooked through.
