Chunky Monkey Bites

These are awesome little snacks to make in advance and always a huge hit for all the family. Super easy to make and ready in 20 minutes.

Ingredients
- 4 medium, ripe bananas
- 1 egg
- 150g crunchy nut butter
- 225g rolled oats
- 1 tsp. cinnamon
- Salt to taste
- 60g dark chocolate, chopped (optional)
Method
- Pre heat the oven to 180°C/350°F/gas mark 4.
- Line a baking tray with greaseproof paper or grease with a little oil.
- Place the oats in a mixing bowl.
- Blitz the egg and banana in a blender and add to the oats. Stir in the nut butter, cinnamon, salt and dark chocolate if adding.
- Place spoonful’s of the mixture on the prepared baking tray and bake in the oven for 20–22 minutes until golden and crunchy around the edges.
