Fitter Footy Pizza

Here at Fitter Food we love a sporting occasion and have been putting our minds to some Fitter Food inspired kick-back-and-watch-the-footy awesome meal times. Behold… the Fitter Footy Pizza is born!
To create the pizza we used our simple cauliflower pizza base and then we worked up some paleo friendly toppings based on an exemplar England vs. Italy game. One half is for England and topped with sausage, bacon and egg and the other half is for Italy, topped with fresh basil, tomatoes and mozzerella!
The idea is simple. Pick your game and then choose two sets of toppings with traditional foods from the countries you’re watching compete. You’re bound to create something awesome. Ingredients
For the base
- 1 medium cauliflower grated or blended (but not to a pulp)
- 2 eggs beaten
- 1 mozzarella ball grated or finely broken
- Himalayan pink salt and freshly ground black pepper
- 1 tsp garlic powder
For the sauce
- 2 tbsp olive oil
- 2 garlic cloves finely chopped
- 400g tin/carton of chopped tomatoes
- Handful of fresh basil chopped
- Himalayan pink salt and freshly ground black paper
Toppings: This one is up to you and you can be as creative as you like! Look up traditional ingredients from the countries you are representing or watching. It’s great fun and allows you to try ingredients you may not of previously have thought of and it’s certainly a way for the whole family to enjoy Fitter Food.
The England vs. Italy Pizza
For our England vs. Italy Pizza we used egg, bacon, sausage and tomato to represent England and for Italy we went with mozzarella, pepperoni, olives and fresh basil. When it comes to the football we are England all the way but when it comes to pizza toppings…this one was a draw.
Little tip: some mozzarella or goats cheese goes great with any other toppings 🙂
Method
- Pre heat the oven to 180c.
- Grate or blend the cauliflower and place in the steamer for 3-4 mins to soften. Leave to drain completely and cool.
- Beat the eggs, grate the mozzarella and mix both together with the cauliflower in a large bowl until a paste forms. Drain off any excess water.
- Top a baking tray with some greaseproof paper and add a little olive oil to prevent sticking. Add your pizza base mixture to the tray and spread it out to make a rectangle or circle. Don’t make the base too thick 1/2 -3/4 of an inch thick is fine. Place in the oven and cook for 20-25 mins until cooked through and a little crispy on the edges then gently flip it over and cook the under side for a further 10 mins.
- As the base cooks you can make your sauce. Heat the olive oil in a pan on a medium heat and add the garlic and cook for a bout a minute before adding the tomatoes, fresh basil, salt and pepper. cook n a low heat stirring occasionally.
- As the sauce cooks make sure you have all your toppings ready to go on the pizza.
- Remove the pizza from the oven once cooked and add the tomato sauce base and your chosen toppings before returning to the oven and cooking for a final 10-15 mins and the cheese has melted nicely.
