Ingredients

  • 100g grass fed butter or cashew butter
  • 50g xylitol or coconut palm sugar
  • 150g ground almonds
  • 30g tapioca or coconut flour
  • 2 green tea bags (fine tea e.g Clipper)
  • 1 tsp bicarbonate of soda
  • 2 eggs, beaten

Method

  1. Preheat the oven to 180°C/350°F/gas mark 4.
  2. Line a muffin tray with muffin cases.
  3. Cream the butter and xylitol in a food processor or bowl.
  4. Add the eggs, almonds, flour and bicarbonate of soda and mix into a cake batter.
  5. Rip open the tea bags and pour the tea into the cake mixture, mix well.
  6. Pour the mixture into muffin cases.
  7. Bake in the oven for 15-20 minutes until golden brown.
