Ingredients
- 1 red onion, peeled and sliced
- 1 large courgette, sliced
- Handful olives
- 1 yellow pepper, deseeded and chopped
- 180g tomatoes on the vine
- 3 cloves garlic, peeled and chopped
- 1 tbsp. mixed herbs
- 1 tbsp. Olive oil
Method
- Pre heat the oven to 180°C/350°F/gas mark 4.
- Place all the vegetables into a baking tray, sprinkle with chopped garlic,
mixed herb and drizzle with olive oil. - Place in the oven to cook for 35–40 minutes until the vegetables are soft.
