Ingredients
- Knob of butter
- 1 pack quick cook basmati rice
- 150 ml tinned (light) coconut milk
- 2 tsp desiccated coconut
- 1 small mango, peeled and chopped into small cubes
- 1 tsp sesame seeds
Method
- Melt the butter in a saucepan on a medium heat before adding the rice and stirring through.
- As the butter is melting, heat a frying pan over a medium heat and add the sesame seeds to the pan
without oil to cook for a few minutes until golden. - Shake the coconut milk in the can, open and stir. Add to the saucepan and stir again. Cook for 2–3 minutes.
- Add the desiccated coconut and the mango chunks, and stir through. Cook for a further minute or so until it has a nice creamy texture.
- Top with the sesame seeds and serve.
