Ingredients

  • 2 chicken breasts or 4 thighs/legs, chopped
  • 2 tsp medium curry powder
  • 2 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/2 tsp black pepper (optional)
  • 1 tbsp peeled and grated ginger
  • 2 garlic cloves, finely chopped
  • 1 large onion, chopped
  • 390g carton of tomatoes
  • butter, ghee or coconut oil for the pan
  • coriander (chopped) to serve – optional

To Serve
Cauliflower Rice

Method

  1. Add the oil to a saucepan and sauté the chicken for 5 minutes.
  2. Add all the spices, ginger, garlic, onion, and tomatoes, until the chicken is covered. (Add extra water if needed.)
  3. Bring to a boil and simmer for around 20–30 minutes or until the chicken is cooked and tender.
  4. Serve with Cauliflower Rice and some chopped coriander if desired
