Who doesn’t love a bit of crispy Southern fried chicken! But sadly most you will get our hands on are full of crap processed ingredients not to mention fried in poor quality oils.

Which is why we are very excited to share this recipe with you guys. Our fakeaway South East Fried Chicken is the perfect weekend treat.

Ingredients

  • 8-10 pieces of chicken use an assortment of breasts, thighs, drum sticks and wings with the skin on
  • 150g ground almonds
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1/2 – 1 tsp cayenne chilli powder
  • 1 tsp garlic flakes
  • Good pinch of pink salt
  • 8 tbsp coconut oil
  • 4 spring onions finely chopped
  • 2 eggs beaten

Method

  1. Pre heat the oven to 180c.
  2. Mix the ground almonds, paprika, thyme, cayenne chilli, garlic flakes and salt together thoroughly in a bowl then spread the mixture out on a plate.
  3. Heat the coconut oil in a large pan. Then using a fork to move it around dip a piece of chicken in the beaten egg and coat thoroughly before laying it in the ground almonds mixture. Be sure to use a separate spoon to coat the chicken in the almonds as if it gets on your hands along with the egg its very messy and more of the mixture will end up on your fingers than the chicken.
  4. Once fully coated add the chicken to the pan and cook for about 1-2 mins on each side to crisp up and seal (DO NOT BURN THEM) before adding them to a baking tray and placing in the oven to cook for a further 30-35 mins or until cooked through. This can vary depending on the oven.
  5. Serve up, leave to stand for a few mins, top with the spring onion and let everyone tuck in.

Tip:
Use your hands to eat these, it makes them taste better 🙂
