Ingredients
- 9 eggs
- 100g Parmesan cheese
- 500g chicken breast
- 1 tsp bicarbonate of soda
- 1 tsp dried rosemary
- 1/2- 1 tsp sea salt
- 1 tsp garlic powder
- Black pepper
- Any spices

Method
- Poach the chicken until cooked through.
- Chop the cooked chicken and place in a blender with the cheese (broken into chunks) and eggs. Beat into a batter.
- Add the rosemary, bicarb, salt and stir. Pour into a loaf tin lined with greaseproof paper and cook for 45 minutes on gas mark 4/180°C.
- Allow to cool before slicing. Can be topped with butter, nut butter or toasted/grilled and topped with olive oil, cheese or Parma ham.
