Sticky Coconut Mango Rice

Ingredients

  • Knob of butter
  • 1 pack quick cook basmati rice
  • 150 ml tinned (light) coconut milk
  • 2 tsp desiccated coconut
  • 1 small mango, peeled and chopped into small cubes
  • 1 tsp sesame seeds

Method

  1. Melt the butter in a saucepan on a medium heat before adding the rice and stirring through.
  2. As the butter is melting, heat a frying pan over a medium heat and add the sesame seeds to the pan
    without oil to cook for a few minutes until golden.
  3. Shake the coconut milk in the can, open and stir. Add to the saucepan and stir again. Cook for 2–3 minutes.
  4. Add the desiccated coconut and the mango chunks, and stir through. Cook for a further minute or so until it has a nice creamy texture.
  5. Top with the sesame seeds and serve.
