Sweet Patatas Bravas

Last Friday we decided to have a tapas style dinner together in our new flat (which we love!) It was amazing and these patatas bravas were the highlight of the meal. Thankfully we made plenty so there was enough for lunch the next day. As always it’s dead simple and great as part of a tapas dinner or simply a way to spice up your side dishes. Give it a try.

Ingredients

  • 4 medium sweet potatoes chopped into cubes
  • 300g of passata
  • 1 medium sized onion peeled and finely chopped
  • 3 tomatoes finely chopped
  • 2 garlic cloves crushed or finely chopped
  • 2 tsp of smoked paprika (reduce or increase depending on taste)
  • A pinch of cayenne chilli powder (reduce or increase depending on taste)
  • 1 tbsp coconut oil
  • Pink salt
  • Handful of fresh parsley

Method

  1. Pre heat the oven to 180°C.
  2. Melt down the coconut oil in a baking dish then add the sweet potato (save a little oil for the sauce). Give it a stir to ensure it is fully coated in the oil, sprinkle with pink salt and place in the oven.
  3. Leave these to cook for about 25 minutes or until cooked through. Stir occasionally.
  4. When your potatoes are half way through its time to prepare the sauce.
  5. Add the remaining coconut oil to a saucepan on a medium heat and then add the garlic and onion, cook until it starts to soften then add the passata, tomatoes, smoked paprika and cayenne chilli, a little salt and then stir through. Leave to simmer for about 10 minutes stirring occasionally.
  6. Once the potatoes are cooked through remove from the oven, place in a bowl, top with the sauce and then sprinkle a generous handful of fresh parsley over the top then let people help themselves.

Tips:

  1. This sauce is of course fantastic with sweet potato but it also goes great with any roast veg. We had it with parsnips and it was smashing. There was a little left over and we had it on top of our scrambled eggs the next day. You HAVE to try that.
  2. Taste the sauce and add more cayenne chilli if you want a bit more kick. Recipes are fantastic but it’s all about adding a personal touch so always taste your food as you go. It’s surprising how many don’t.
