Ingredients
- Ghee or butter for the pan
- 1kg beef or lamb mince
- 2 red onions, cubed
- 3 tomatoes, cubed
- 2 tbsp tomato paste
- 1 carton (390g) of chopped tomatoes
- 3 garlic cloves, finely chopped
- 1 red pepper, sliced
- 1 tbsp mixed herbs
- 1 heaping teaspoon chilli powder
- 1 tbsp smoked paprika
- 1 tbsp ground cumin
- 1/2 tsp salt
- 1 tsp pepper

Method
- You can start by browning the ground meat and onions in a little oil. However, an even quicker option is to place all the ingredients in a large saucepan, mix together, cover, and gently simmer over low heat for 25–30 minutes.
- While the chili cooks, prepare the Cauliflower Rice.
- After 25 minutes, start tasting the mixture and decide whether you wish to add a little more herbs, chili, or seasoning.
- Serve on a bed of Cauliflower Rice and/or topped with Guacamole.
