Ingredients

  • Ghee or butter for the pan
  • 1kg beef or lamb mince
  • 2 red onions, cubed
  • 3 tomatoes, cubed
  • 2 tbsp tomato paste
  • 1 carton (390g) of chopped tomatoes
  • 3 garlic cloves, finely chopped
  • 1 red pepper, sliced
  • 1 tbsp mixed herbs
  • 1 heaping teaspoon chilli powder
  • 1 tbsp smoked paprika
  • 1 tbsp ground cumin
  • 1/2 tsp salt
  • 1 tsp pepper

To Serve
Cauliflower Rice

Method

  1. You can start by browning the ground meat and onions in a little oil. However, an even quicker option is to place all the ingredients in a large saucepan, mix together, cover, and gently simmer over low heat for 25–30 minutes.
  2. While the chili cooks, prepare the Cauliflower Rice.
  3. After 25 minutes, start tasting the mixture and decide whether you wish to add a little more herbs, chili, or seasoning.
  4. Serve on a bed of Cauliflower Rice and/or topped with Guacamole.
