Extra Strong Chocolate

Ingredients

  • 250g 85-95% dark chocolate
  • 160g smooth peanut butter
  • 1 tablespoon cacao powder
  • 15g cacao nibs
  • 50g chopped dark chocolate (70-95%)
  • Honey, stevia or monk fruit to taste
  • Salt to taste

Method

  1. Line a loaf tin with greaseproof paper (or prepare some chocolate moulds).
  2. Melt the chocolate in a heatproof bowl over a saucepan of simmering water. Once melted stir in the peanut butter and combine thoroughly.
  3. Remove the melted chocolate from the heat, allow to cool for 5 minutes and then add the cacao powder and cacao nibs. Use a fork or whisk to combine thoroughly.
  4. Allow the mixture to cool for ten minutes (in the fridge if needed) before stirring in the chopped dark chocolate.
  5. Stir to combine and add your desired sweetener and a sprinkle of salt to taste.
  6. Pour into the prepared tin and place in the fridge to set (or freezer to set quickly).
  7. Once the chocolate has completely set, remove from the chocolate mould, slice into squares and store in the fridge.
