Hot Cross Banana Loaf

We’ve given our favourite loaf an Easter makeover with mixed spice and sultanas. Bake this for your friends and family on Easter Sunday and serve warm with melted butter.

Ingredients

  • 5 bananas
  • 4 eggs
  • 1 tablespoon of mixed spice 
  • 100g sultanas
  • 150g cashew butter (you can use any nut butter or coconut oil)
  • 4 tablespoons unsalted butter or coconut oil
  • 50g coconut flour 
  • 2 teaspoons of bicarbonate of soda

Method

  1. Preheat the oven to 180 C (you can melt the butter or coconut oil by placing in the oven in a heatproof dish whilst it’s warming). Line a loaf tin with greaseproof paper.
  2. Chop four of the bananas and add to a food processor with the eggs, nut butter and melted butter or coconut oil.  Mix the ingredients together.
  3. Sift in the flour, baking powder, mixed spice, bicarbonate of soda and vanilla extract, mix again until it forms a cake batter. Stir in the sultanas.
  4. Stir in the sultanas and pour into the lined tin. Slice the final banana and lay across the top of the loaf to make a cross.
  5. Bake for 45 minutes. Before removing from the oven insert a knife in the middle and check it comes out clean so you know the loaf is baked all the way through.
  6. Once baked remove from the tin and allow to cool. Slice and serve hot with butter. Bosh!
