Indian Style Sweet Potato, Onions and Tomatoes

Very few ingredients feature here yet the taste is amazing. Next time you have friends round for dinner cook this up and place it in the middle of the table for them to tuck in. We guarantee it will go down a treat. Have this as a side dish or as part of some Indian style tapas mini bowls.

Ingredients

  • 3 medium sweet potatoes peeled and sliced 1cm thick
  • 2 tbsp coconut oil
  • 1 large red onion peeled and sliced
  • 200g cherry tomatoes halved
  • 1 green or red chilli deseeded and finely chopped
  • 2 tsp garam masala
  • Generous pinch of pink Himalayan salt
  • Large handful fresh coriander

Method

  1. Pre heat the oven to 180c (may need to be higher depending on the oven).
  2. Melt down the coconut oil in a baking dish by placing it in the oven. Then add all the ingredients and coat them nicely in the oil and spices.
  3. Place in the oven and cook for 25- 30 mins or until cooked through. Be sure to stir occasionally.
  4. Place on a plate and top with lots of fresh coriander.
