  • 2-3 eggs
  • 1 banana, sliced
  • Coconut oil for cooking
  • A sprinkle of cinnamon
  • A sprinkle of Himalayan Pink or Celtic Sea salt
  • Salad to serve

Method

  1. Place the coconut oil in a pan and melt over a low heat.
  2. Add the sliced banana to the pan and cook gently for 5 minutes, flipping occasionally.
  3. Beat the eggs in a bowl and add to the pan. Toss the banana and eggs with a spatula, allowing the eggs
    to scramble.
  4. Top the eggs and banana with cinnamon and salt, and serve with a large salad.
