Ingredients
- 2-3 eggs
- 1 banana, sliced
- Coconut oil for cooking

- A sprinkle of Himalayan Pink or Celtic Sea salt
- Salad to serve
Method
- Place the coconut oil in a pan and melt over a low heat.
- Add the sliced banana to the pan and cook gently for 5 minutes, flipping occasionally.
- Beat the eggs in a bowl and add to the pan. Toss the banana and eggs with a spatula, allowing the eggs
to scramble. - Top the eggs and banana with cinnamon and salt, and serve with a large salad.
