Roast Chicken Bread

Ingredients

  • 9 eggs
  • 100g Parmesan cheese
  • 500g chicken breast
  • 1 tsp bicarbonate of soda
  • 1 tsp dried rosemary
  • 1/2- 1 tsp sea salt
  • Optional

  • 1 tsp garlic powder
  • Black pepper
  • Any spices

Method

  1. Poach the chicken until cooked through.
  2. Chop the cooked chicken and place in a blender with the cheese (broken into chunks) and eggs. Beat into a batter.
  3. Add the rosemary, bicarb, salt and stir. Pour into a loaf tin lined with greaseproof paper and cook for 45 minutes on gas mark 4/180°C.
  4. Allow to cool before slicing. Can be topped with butter, nut butter or toasted/grilled and topped with olive oil, cheese or Parma ham.
