Ingredients
- 250g dark chocolate (70-85%)
- 130g crunchy peanut butter
- 30g toasted coconut flakes, crushed
- 40g dark chocolate rice cakes, crushed
- 15g cacao nibs
- 20g honey roasted nuts (or any roasted nuts)
- 2 tsp. vanilla extract
- Sprinkle of sea salt to taste
- Stevia honey or monk fruit to taste
Method
- Line a loaf tin with greaseproof paper (or prepare some chocolate moulds).
- Melt the chocolate in a heatproof bowl over a saucepan of simmering water. Once melted stir in the peanut butter and combine thoroughly.
- Remove the melted chocolate from the heat, allow to cool for 5 minutes and then add the coconut flakes, rice cakes, cacao nibs, roasted nuts and vanilla.
- Stir to combine and then add your desired sweetener and a sprinkle of salt to taste.
- Pour into the prepared tin and place in the fridge to set (or freezer to set quickly).
- Once the chocolate has completely set, remove from the chocolate mould, slice into squares and store in the fridge.
