Ingredients
- 200g mixed nuts and coconut flakes
- 2 tbsp goji berries
- 50g coconut flour
- 100g vanilla protein powder
- Generous sprinkle of Himalayan Pink or Celtic Sea salt
- 1 heaped tsp cinnamon
- 1 tsp vanilla extract
- 50g coconut oil
- 70g cashew butter
- 2–3 tbsp water

OPTIONAL
- If the protein powder isn’t sweetened you may wish to add some raw honey, liquid stevia or xylitol to taste
Method
- Place the nuts, coconut and goji berries in a food processor and blend until finely chopped.
- Add the flour, protein powder, cinnamon and salt.
- Finally blend in the coconut oil, cashew butter and vanilla extract.
- The mixture should start to form a sticky dough. Add a tablespoonful of water to help it bind. You should be able to take a small handful and shape into a small ball (squeeze it to help the mixture bind). If the mixture is still falling apart, add another 1–2 tablespoonfuls of water and try again.
- Place the balls in the fridge to set.
